Apple Walnut Coffee Cake

Apple Cinnamon Coffee Cake

Makes 1 rectangular pan 32×12

6 Granny Smith Apples

3 T Butter

6 T Sugar


6 C AP Flour

3 C +6T Sugar

1 T Salt

3 ¾ Sticks Butter (15 oz)

1 T Baking Powder

1 ½ t Baking Soda

1 T Cinnamon

2 ¼ Cup Yogurt

3 Eggs

1 T Van Ex

9 oz Walnuts

1 ½ C Brown Sugar

1 T Cinnamon


  1. Heat oven to 350. Butter and flour sides of pan. Saute apples in brown butter and add sugar at end to glaze. Cool.
  2. Whisk flour, sugar, salt. Add butter and mix till crumbly. Remove 3 C.
  3. Whisk b. powder and soda and 1 T cinnamon in remaining mix. Add yogurt, egg, and vanilla and mix until smooth, fluffy and frosting like. Fold in apples. Scrape into pan.
  4. Add nuts, brown sugar, cinnamon to reserved mix. Toss. Sprinkle over top.  Bake for 55 minutes rotating every 20.
