Romesco Sauce

People were talking about the sauced served with the chicken on January 10th.  If you want to learn more about its origins, look at wikipedia here.

To make it  at home, a cuisinart is needed for a large batch. What would be better would be a vitamix blender.

The nuts are first toasted.


Then they are ground in our kitchen’s Robot Coupe.


The Piquillo Peppers are drained.


The Garlic is chopped.


These are toasted, stemmed, seeded, dried chilies that were soaked and pureed.


In goes the pureed Piquillo Peppers.


Here is the Robot Coupe after 5 Gallons of Romesco Sauce. Its first workout.
